Enchilada Night

We didn't have a can open.... so I opened the can with a giant knife!

We also don't have an oven, so I heated them up over boiling water on the stove while they were on a cookie sheet. (Dad, be sure to show this to grandma, because I am super proud of this haha)

YUM YUM! They turned out so good! =) 

Jess made "blended beans" to stick with the Mexican themed dinner!

Serving it up for everyone..... the enchi's didn't last that long =)
